santa's little helper

If you are looking for a really yummy Christmas cookie these are the ones that you need to try. They are delicious and they look yummy and festive for the holidays. There is a cherry tucked inside a yummy layer of chocolate fudge. The only thing is the cute little helper doesn't come with the cookies when you make them. He's mine to keep.

Chocolate Covered Cherry Cookies

1 1/2 c. flour
1/2 c. butter or margarine
1 c. sugar
1/2 c. cocoa
1/4 tsp. baking powder
1 egg
1/4 tsp. baking soda
1 1/2 tsp. vanilla
1/4 tsp. salt
2 (10 oz.) jars Maraschino cherries, 24-48 of them
1 (6 oz.) Semi sweet chocolate chips
1/2 c. sweetened condensed milk


Stir together flour, cocoa, baking powder, soda, and salt. Set mixture aside. Beat butter to creamy stage add sugar. Add egg and vanilla. Beat till mixed. Add flour. Shape dough into 1 inch balls; place 2 inches apart on ungreased cookie sheet. Press down center of each ball with thumb. Drain and save juice for maraschino cherries. Press a small cherry into center of each cookie ball and bake as directed below. 

Frosting
In a heavy saucepan melt chocolate chips and condensed milk over low heat stirring often. Stir in 4 tsp. of cherry juice. Spoon about 1 tsp. frosting over each cookie; covering the cherry. Frosting may be thinned with additional cherry juice. Makes 24-48 cookies. Bake at 350 for 10 minutes. Cook on wire rack.
